In niseko, bar gyu+ and bangbang izakaya and izu seafoods are classics (all in hirafu village). Sapporo generally, I havent done much, but I'm always mind blown whenever i go to chitose airport. The domestic area has a massive floor of restaurants!
Tokyo there's a bunch of fun places on my list. I always return to glitch coffee and bar centerfolia.
Kyoto, tons of good kaiseki, but casual fun places, I remember menbaka fire ramen.
Osaka - the original glitch coffee and one of the best yakitori places I've ever been to.
warning epicurus. doing a 2 week vacation in japan and going to comb through all of your recs in tokyo/kyoto/osaka/sapporo/niseko.

Tiny coffee shop with good coffee. I prefer the Osaka one, but Tokyo is good too
