Made it out to Singapore for early February. Spent a few days at the Shangri-La, before trying the Raffles Sentosa, a new hotel that opened less than a year ago.
The hard product is amazing, but sadly, the F&B is a bit lacking. There was a really nice freshly-made burrata mafaldine, but the food here was generally expensive and disappointing. The Sentosa take on the Singapore Sling is a lot more balanced and refreshing than the sickeningly sweet classic one at the original hotel, so that’s a bit of an improvement.
The thing to do in Singapore isn’t to eat at the hotel though - it’s to eat cheap and local.
A rich, sweet chai-like gingery Teh Halia, or a piece of crisp kaya toast dipped in some half-boiled egg.
Freshly made kueh tutu - lightly steamed rice flour cakes filled with palm sugar or a crushed peanut and sugar mix. A lot dryer and crumblier than I would’ve expected from a steamed dish.
What must be a national treasure for Singapore, the famous chili crab - sweet, sour, slightly spicy, and always served with deep-fried mantou to soak up the delicious sauce!
A slightly less famous version - the peppery black pepper crab, served picked. There are two or three go-to recipes for crab in Singapore - classic chili crab, black pepper and white pepper. Frankly, this is one where we should just stick with the classics - the sweet, tangy, slightly spicy tomato-based chili crab is still my favourite.
A dessert that looked better than it tasted, but a very topical one for Chinese New Year. Despite the look, it was actually a blueberry chessecake!
