Not a lot going on this month. Recovering a bit and catching up on work after a long trip to Japan. The last few months have been rough, and it’s been good getting back into a regular routine.
I’m hoping to get back to Singapore briefly in December. Slowly making my way down my list of restaurants there. I find that Singapore generally outperforms expectations on fine dining - they do classical and contemporary French very well, and I was very surprised with the quality of the Japanese there. Of course, takes on Malay and Indian were amazing as well.
I found myself at a popup with the “Blend Brothers” at Brasserie on the Eighth. No idea who they were, but I was hungry, and it was just downstairs from my hotel.
A few neat dishes - after my experience with kohlrabi at Mauro Colagreco, I was eager to see it in a different setting. Thin slices mandolin-ed from the large root vegetable, wrapped around a generous portion of picked crab meat, pretty interesting.
A hamachi, scallop and yuzu crudo
Both the soups were big hits - a concentrated lobster bisque and a truffle cream of mushroom. Simple, yet amazing!
Apparently, the Blend brothers are also known for their mixology, and they presented us with a basil-infused, basil cocktail that tasted like a hit of concentrated basil. Neat, refreshing, felt like it would go well with pizza…
After my experience at Row on 5, managed to pick up my own bottle of Chateau d’Yaquem. Polished that one off within a few nights.
Starting to get a bit cold now, which means it’s mulled wine season.
